Spiced Poached Pears in Shiraz Wine
-Love Shiraz for this… it’s dry and not too sweet, and your addition of spices, citrus zest and sugar really ,make this a fantastic treat!!

Sooo Simple... yet Elegant!
-3-4 Bosc Pears In season this time of year
-1 bottle of Australian Shiraz red wine
+ 2 C Water
-2 cinnamon sticks
-1 vanilla pod
-Spices: Star anise, cloves, lemon zest, orange zest and
organic sugar to taste, you decide how much or how little you would like!
Method: (to the Madness!)
1.)Heat the wine and water with the cinnamon sticks, vanilla pods, star anise, clove, sugar, orange and lemon zest last.
2.)Simmer on a med. low heat, uncovered, until the sugar has dissolved
3.)Peel the pears, leaving on the top stalk, that's the sexy part!
4.)Place pears, stalk up, into a good sized saucepan, which will accommodate all your pears and cover them completely with the wine, I love to say “the pears are taking a hot, sexy vino bath!”
5.)When the pears are fully soaked thru, depending how ripe they are, leave them to cool in the liquid.This could take 20-30 minutes or so....
6.Remove them from the liquid
7.)Strain the liquid through a sieve lined with muslin, discard the simmered spices.
8.)Simmer the remaining liquid until it has reduced and thickened, you should definitely taste test this after reducing for a lil bit.. make sure its to your liking!
9.) Cool off, kick back and relax sweetiepie! You deserve it after all that hard work!
Pour reduced wine sauce over the pears and serve with fresh meyer lemon sorbet! Or a delish Vanilla light ice cream with lemon or orange zest Love Love Love!!
